+ 5 to Constitution- Pumpkin Spiced Cupcakes

After making the pumpkin spiced cookies I was left with a huge amount of pumpkin puree and no idea what I was going to do with it. So instead of letting it get pushed to the back of the refrigerator until someone decided to throw it out I decided to try out another pumpkin spiced recipe from Skinnytaste.com.

The cupcakes themselves came out great but the icing was terrible. I don’t know if it was a case of too much pumpkin or a bad recipe. It was oddly sour tasting and I would not recommend it to anyone who tries out the recipe. It would have been way better with plain cream cheese icing instead. Oh well lesson learned.
