+ 5 to Constitution- Pumpkin Spiced Chocolate Chip Cookies
During the end of of last semester instead of working on my final papers for my classes I decided that I would start baking more. Of course thinking back now this was not the best decision but I am happy to report that I did pass all of my classes regardless of my procrastination. (I do not however recommend that others follow in my foots steps because it leads to bags under your eyes and a crabby attitude.) I digress!
The recipe that I used for these cookies was found on Skinnytaste.com. Its a great site with a lot of low fat recipes that taste amazing. Mine didn’t turn out looking anywhere as elegant as the ones one the official website. In hindsight think I should have added a little bit more water to my batter. Mine are more ‘rustic’ looking.
I have one fun story to go with baking these cookies. This was the day that I found out that the mixer in the house had been thrown out. Que me swearing like a sailor as I attempted to mix everything by hand. It wouldn’t have been so bad if the only tool at my disposal was a flimsy whisk that that dough kept getting stuck in. I can honestly say I have new respect for baking in the past before the wonderful invention of a mixer.
Over all I didn’t have any problems with the recipe. It was super easy but I would recommend that people double the recipe as the original amounts posted I found didn’t make as many cookies as listed. I would defiantly think about making them again.
